Following its celebrated 1992 debut, Brasserie Les Halles became one of New York City’s most iconic French brasserie concepts until its closure in 2016. The restaurant gained worldwide recognition through the late Executive Chef Anthony Bourdain, who drew inspiration from his time at “Les Halles” for his book Kitchen Confidential. CNRG Hospitality was retained by renowned cookware entrepreneur Francis Staub to oversee and coordinate all aspects of the new build, including lease negotiations, pre‑opening design and construction, and comprehensive inter‑agency management with the NYC Department of Buildings, FDNY, Con Edison Gas & Electric, and the NY State Liquor Authority. CNRG Hospitality guided the project through every inspection and regulatory milestone to ensure its successful completion.
